Mint iced latte

This minty iced latte is super refreshing and it's SO worth the extra effort.

Ingredients
- 100 g granulated sugar
- 100 ml water
- 2 sprigs mint, plus extra to garnish
- ice
- 150 ml whole milk
- 1 shot espresso or 1 tsp espresso-style instant coffee made up with 2 tbsp boiling water
Directions
- Step 1For the mint simple syrup, put the sugar, water, and mint sprigs into a small saucepan and bring to a simmer. Heat on low for 1-2 minutes, until the sugar has completely dissolved. Turn off the heat and let steep for 10mins before removing the mint.
- Step 2 For the iced latte, fill a heat-safe glass with ice. Pour the milk into another glass or bowl with 1 tbsp of the mint syrup. Use a hand-held electric milk frother to make the cold milk light and frothy. Alternatively, you can use an electric whisk. Pour the foam into the glass over the ice.
- Step 3Pour in the coffee, garnish with a sprig of mint and serve immediately.
