Gently muddle mint with sugar syrup in a shaker. Add gin, lemon juice and ice. Shake for 10–15 seconds. Strain into a coupe. Top with soda water. Garnish with a mint sprig.

Fresh, fizzy, and a little bit unexpected - earthy matcha meets sweet white grape juice, lifted with the refreshing sparkle of Cucumber & Watermelon tonic water for a drink that feels light, vibrant, and heatwave ready.

    • 50ml REAL Dry
    • 40ml Lyres Agave Blanco (0.4% ABV)
    • 10ml lime juice
    • 5ml agave syrup

    Method:

    Chill a rocks glass. Combine the Lyres Agave Blanco, lime juice, and agave syrup and shake with ice until a frost forms on the exterior of the shaker. Double strain into the chilled glass over iceTop with REAL Dry and garnish with a lime wedge.

      • 50ml Dr. Squid Gin
      • 15ml sugar syrup
      • 25ml lemon juice
      • 15ml egg white
      • 20ml Creme De Peche

      Method:

      1. In a cocktail shaker, add the following ingredients: 20ml Creme De Peche, 15ml sugar syrup, 25ml lemon juice and 15ml egg white
      2. Shake well over ice
      3. (PRO TIP) Strain the cocktail away into the other side of the shaker and discard the ice. Then shake the cocktail again to emulsify the egg white and create a light fluffy consistency
      4. Fine strain the cocktail into a CHILLED coupe (Fine straining means pouring g through the cocktail shaker strainer, and a small sieve too)
      5. Serve with a lemon peel expressed over the glass. To do this, hold the peel skin side down, facing the glass. Squeeze lengthways to express the citrus oils from the skin over the cocktail. Gently rub the skin side of the peel around the rim of the glass, give it a good twist and balance on the rim of the glass to serve

        Ingredients:

        Method:

        1. Get a small 150ml coupe or martini glass and a small wide-ish jug. Scoop the lemon sorbet into the jug.

        2. Pour over the vodka, followed by the prosecco. Mix swiftly but gently with a couple of forks, pulling the sorbet apart and into the liquid rather than beating the ingredients together.

        3. When you have a lump-free cohesive mixture resembling a cloud of frosty froth, pour into the prepared glass.

        4. Raise to your lips and prepare to be transported!

Here's how to make it yourself.

        Ingredients:

        • 50ml Pimm’s No.1
        • 25ml Strawberry Puree (Monin)
        • 25ml Apple Juice
        • 300ml Double Cream
        • 5ml White Chocolate Syrup (Monin)
        • 15ml White Chocolate Sauce (Monin)
        • Dried Strawberry (to garnish)

        Method:

        To build the drink combine the Pimm’s, strawberry puree, and apple juice in a shaker and add a big handful of ice. Shake hard, then pour over ice into your chosen glass. To make the white chocolate cream whisk the double cream, white chocolate syrup and white chocolate sauce until mixed. And to finish, layer the white chocolate cream over the fruit base and garnish with dried strawberries.
