These stuffed Padron peppers have been mummified for the ultimate grown-up Halloween buffet snack. Serve with our full moon margs and you've got yourself a party!

Ingredients

  • 8

    Padron peppers, halved and deseeded

  • 1 tsp.

    garlic paste

  • 200 g

    grated mozzarella

  • 200 g

    ready-rolled puff pastry

  • Candy eyes or sliced olives, to decorate

Directions

    1. Step 1Preheat the oven to 200ºC (180ºC Fan). Line two baking trays with baking parchment. Toss the grated cheese with the garlic paste, salt and black pepper. 
    2. Step 2Unroll the pastry and cut into thin strips, about ½ cm thick, then cut in half for short strips. 
    3. Step 3Press the garlicky cheese firmly into each pepper half and wrap two strips of the pastry criss-crossing around each pepper half. Add two halved pieces of sliced olive for the eyes if you’d like. 
    4. Step 4Arrange evenly spaced on the baking trays and cook for 15-18mins, until the pastry is well browned. Allow to cool on the trays before moving. Add candy eyes once cool if using instead of olives.
