Padron pepper mummies

Ingredients
- 8
Padron peppers, halved and deseeded
- 1 tsp.
garlic paste
- 200 g
grated mozzarella
- 200 g
ready-rolled puff pastry
Candy eyes or sliced olives, to decorate
Directions
- Step 1Preheat the oven to 200ºC (180ºC Fan). Line two baking trays with baking parchment. Toss the grated cheese with the garlic paste, salt and black pepper.
- Step 2Unroll the pastry and cut into thin strips, about ½ cm thick, then cut in half for short strips.
- Step 3Press the garlicky cheese firmly into each pepper half and wrap two strips of the pastry criss-crossing around each pepper half. Add two halved pieces of sliced olive for the eyes if you’d like.
- Step 4Arrange evenly spaced on the baking trays and cook for 15-18mins, until the pastry is well browned. Allow to cool on the trays before moving. Add candy eyes once cool if using instead of olives.
