Ingredients

For the ice

  • Juice of 2 limes

  • 40 ml

    simple syrup

  • Edible glitter

For the rim

  • 30 g

    sugar

  • 20 g

    flaky sea salt

  • 5 g

    basil, torn

For the cocktails

  • 200 ml

    silver tequila

  • 100 ml

    triple sec

  • 50 ml

    creme de cassis

  • 50 ml

    simple syrup

  • 100 g

    blackberries, crushed

Directions

    1. Step 1For the ice cubes, divide the lime juice and syrup between the ice cube moulds. Top up with water until full and spritz with edible glitter. Freeze for at least 6hrs or overnight until solid.
    2. Step 2To make the sugar rim, put the sugar, salt and basil into a mini chopper or food processor. Pulse a few times until the herbs are very finely chopped and combined.
    3. Step 3Wipe the rims of four margarita glasses with a wedge of lime to wet. Put the herby mixture onto a plate and dip the rims of the glasses to coat.
    4. Step 4Remove the ice cubes and put one into the centre of each glass. Add the cocktail ingredients to a large cocktail shaker with a handful of ice, or to a jug. Shake or stir until icy cold and strain evenly into the glasses. Dust the top of the cocktails with some extra edible glitter if you’d like.

If you don’t have a globe ice cube mould, try freezing the ice cube mixture in a muffin tin for round pucks instead.
