We've said it before and we'll say it again, Piña Coladas are the epitome of sunshine and white sandy beaches. They're too tasty not to love. And these boozy ice lollies take the classic recipe to the next level. 

We've not bothered to blend the pineapple mixture (because we're lazy and it's not really necessary), but if you'd prefer a smoother texture - blend away!

Ingredients

  • 1

    x 435g tin of crushed pineapple in juice

  • 50 ml

    Malibu

  • 200 ml

    coconut cream

  • 50 ml

    white rum

  • Juice of 1/2 lime

Directions

    1. Step 1Tip the crushed pineapple with its juice into a bowl and stir through the Malibu. Spoon the mixture between 8 ice lolly moulds.
    2. Step 2Rinse the bowl clean and add the coconut cream, rum and lime juice. Mix together until smooth, the coconut cream can be lumpy if it’s cold. 
    3. Step 3Pour the coconut mixture over the pineapple mixture and use the ice lolly sticks to slightly swirl the mixtures together.
    4. Step 4Insert the ice lolly sticks and freeze for at least 8hrs or overnight. To release from the moulds, dip the plastic base into a sink of hot water for 30 seconds and gently squeeze the sides to loosen.
