Skewering the lime is a MUST

Skewering the lime onto the lolly stick stops it from floating to the top and helps keep the mint leaves pushed down (genius, we know). If you prefer shredding the mint, go for it! But we like leaving the mint leaves whole.

Ingredients
- 10 g
mint, leaves picked
juice of 2 limes
- 100 ml
simple syrup
- 50 ml
white rum
soda water, to top up
- 1
lime, sliced
Directions
- Step 1Push a few mint leaves into each ice lolly mould. Add the lime juice, simple syrup and white rum to a large measuring jug and top up the mixture to 350ml with soda water.
- Step 2 Pour into the ice lolly moulds, skewer a slice of lime onto each ice lolly stick and insert. Freeze for at least 8hrs or overnight.
- Step 3To release from the moulds, dip the plastic base into a sink of hot water for 30 secs and gently squeeze the sides to loosen.
